I know this is not really Halloween related, but still, when decorated brownies can become Halloween brownies. So this week's Blogoween recipe will be 'Halloween' brownies.
First things first, ingredients these ingredients are for 24 brownies.
Brownies:
400 grams of chocolate
400 grams of cold butter
400 grams of sugar
200 grams of flour
8 eggs
Topping option 1: White chocolate (melted)
Topping option 2:
150 grams of powdered sugar
3 tablespoons of water
Start with melting the chocolate au bain marie (in bain marie). Whilst the chocolate is melting, cut the 400 grams of butter into pieces.
When the chocolate is fully melted, add the chunks of butter until all the butter is melted and the mixture looks shiny/ mirroring.
Let the chocolate mixture cool down, keep stirring so it doesn't get hard.
Split the egg whites form the egg yolks. Beat the egg whites rigidly with a mixer. Whisk the yolks with the sugar until they form a white-foam mixture. Stir it gently through the (cooled down) chocolate mixture. Add the egg white foam and spatula it carefully through the mixture. Add the flour and spatula it carefully through the mixture as well.
Preheat the oven at 180 degrees Celsius.
Put wet parchment paper in the baking tin so it keeps its form during the baking. Pour the batter into the baking tin and smooth out.
Leave them in the oven to bake for 20 to 25 minutes until the top is dry and slightly cracked. Let them cool down in the baking tin.
Cut them into pieces and decorate with either molten white chocolate or glaze (the water and powdered sugar mixed).
