Really easy, very quick and truly delicious. This caramelized biscuit (speculoos) mousse will conquer everyone's heart if you serve this as a dessert at Christmas (eve).
Ingredients (4 portions):
125 g (Lotus) Caramelized biscuits (+ extra for finishing) (you can use any kind or brand caramelized biscuits)
100 ml whipped cream
3 egg whites

Preparation method:
First of all crumble the caramelized biscuits with a mason jar or something.
Beat the whipped cream and mix in the crumbled caramelized biscuits.
Beat the egg whites stiffly and spatula the crumbled caramelized biscuits through it.
Spoon the mousse into 4 small glass jars and put them in the fridge for 4 hours to ascend.
After that you can always finish the mousses with some more crumbled caramelized biscuits.
