As mentioned, here is another friends themed recipe. This weeks recipe: Phoebe's Pea Potatoes for 5 servings.
Ingredients:
1.36 kg of potatoes (peeled, cleaned and quartered) = 3 pounds
2 tbsp of unsalted butter
2 tbsp of sour cream
1/2 cup of cream
1 - 2 yellow onions (sliced)
1/2 cup of green peas
1 tbsp of olive oil
Salt and pepper to season
Preparation method:
Place the potatoes in a large pot with enough water to cover them all. Bring to a simmer and cook the potatoes until soft.
Heat a skillet over medium heat and add olive oil, do this while the potatoes are cooking.
Slice up the onions, put them in the skillet and season with salt.
Cook the onions until they are golden and soft (picture). Stir occasionally to prevent burning.
At the peas to the onions and cook until hot .
Melt the butter in a sauce pan, add the cream when the butter is fully melted.
Drain the potatoes and place them into a bowl with the warm cream and butter.
Mash the potatoes with a masher and beat the mixture by hand.
Add the sour cream and mix everything together really well.
Season with salt and pepper.
Serve with the onions and peas on top.
