It's fall, it's almost Halloween. That means it's the perfect time to make a pumpkin pie!
First things first, the ingredients:
Dough base
1 pumpkin (ca 1 kg)
1 can of skimmed milk
1 tbsp of speculaas spices or cinnamon powder
80 g of white bastard sugar
3 eggs
Food coloring (additional)
Preparation method:
First of all, hand wash the pumpkin, remove the seeds and cut the pumpkin into small pieces. The skin can stay on if you want it to.
Put the pieces of pumpkin into a pan togather with the cinnamon powder, bastard sugar and skimmed milk. Fill the empty can of the skimmed milk with water and add it to the pan with ingredients as well.
Bring the mixture to boil until the pumpkin pieces are soft. Mix and pour the mixture into a big bowl to cool down.
Whilst the mixture is cooling down, you can prepare the baking tin by putting parchment paper (preferably wet to preserve the shape of the baking tin) (you can see it in the picture) in it or by greasing it with butter, before putting the dough base in it.
Preheat the oven to 160 degrees Celsius!
When the mixture is cooled down, mix the 3 eggs through it. After that add orange food coloring if you find it not orange enough.
When all of that is done, pour the mixture over the soil.
Bake the pumpkin pie for about 75 minutes in the oven until the edges look golden brown and the until the stuffing is stiff.
Take the cake out of the oven and let it cool down on a grid.
Serve the cake lukewarm or cold, with or without whipped cream.
