Pumpkin soup

This is the first week of Blogoween, starting with a hot 'n spicy pumpkin soup.

First of all, the ingredients:

  • 400 grams chopped pumpkin

  • 200 ml soy cream

  • 1 red pepper

  • 1 onion

  • 1 clove of garlic

  • 2 cubes of chicken broth

  • 1/2 tsp of ginger

  • a pinch of black pepper

Preparation method:

Cut the pumpkin into small to medium sized pieces. Remove the seeds and and skin of the pumpkin before cutting it.

Chop the onion, red pepper and the clove of garlic finely.

Pour a bit of olive oil into the pan and fry the onion, red pepper and garlic.


After 2-3 minutes, add the 400 grams of pumpkin, soy cream, ginger and chicken broth to the pan.

Bring the mixture to boil. Let the soup simmer for about 10 to 15 minutes until the pumpkin pieces are soft.

Mix the soup and serve.
